On our last blog post we featured Lisa of Lisa’s Plate who graced all of us with her awesome mix of blueberry, watermelon and green tea, and I can’t get enough of it. So, I decided to dig the web for other watermelon cold pressed juice or detox recipes. Recipes that are not basic, meaning they incorporate interesting ingredients and infuse or blend them with liquids other than water.
After a few minutes of digging the web (read Pinterest), I found this gem. It doesn’t have a name yet so I decided to call it Pink Elixir, Pink because of its color and it looks fancy and Elixir because it tastes magical. The star of this recipe is none other than, you guessed it, the watermelon. Pair watermelon with lime, blend them with coconut juice and add a dash of sea salt and you’ll have this fancy, magical, luscious drink. Below are ingredients and step by step process on how to craft the Pink Elixir.
- 3 pounds seedless watermelon cubes
- 1 cup coconut water
- Juice from 1 lime
- 1/8 teaspoon sea salt
Simply put the watermelon cubes in the blender and pour in the coconut juice. (if your blender isn’t big enough to accommodate the ingredients you can divide the recipe and blend them in two batches). Squeeze the lime and in a dash of sea salt. Blend until the mixture is liquefied. If you are not using a high power blender you may end up with a pulpy mixture, no worries, you can just strain and extract the juice. Chill. Then serve it over ice. The shelf life is up to 2 days, be sure to shake well before serving.
Ready-made workout or any cold pressed juice drinks could be expensive and Pink Elixir is a good alternative. Not only does it looks fancy it is packed with health benefits as well. Watermelon juice will keep you energized and hydrated for it is vitamins and essential nutrients like, vitamin A, C and B6. It is also rich in lycopene, antioxidants and amino acids that help keep the skin healthy, cleanse the body, lose weight and boost the immune system. Lime also has a lot of health benefits to contribute. It helps improve digestion, relieves constipation, treatment of scurvy, peptic ulcer, piles, gums, gout, respiratory and urinary disorders. Lastly, coconut juice is good for the blood and adds in more hydrating power to the drink.
Next time you hit the gym or go to your morning jog be sure to have this mystical drink with you and feel how it hydrates and cleanses you from within and gives you that positive energy so you can face your day with enthusiasm.
Aside from being an ideal workout drink, Pink Elixir could also be a party drink, a simple drink to keep you hydrated on a hot day and a drink to help cleanse the body and get rid of hangover after a night of partying. Not to mention, you could also put an adult twist to it by adding your favorite liquor to it.
